Ginger and Lemongrass Cheesecake

Laced with a gingernut crumb, our fiery flavour pairs perfectly with the velvety texture of our cheesecake making for an indulgent treat like no other.

Ingredients Serves 2

• 30g Cream Cheese
• 90g Vanilla Ice Cream
• 25ml bottlegreen Ginger and Lemongrass Cordial
• 3 Ginger Nut Biscuits, Lemon Wedge, Fresh Ginger

FOR THE CHEESECAKE Combine the cream cheese, ice cream and bottlegreen Ginger & Lemongrass Cordial in a food processor or blender and blitz until smooth.

FOR THE GINGERBREAD RIM Crush two ginger nuts into a powdery consistency. Run a lemon wedge around the rim of your glass. Press the rim into the ginger nut crumb.

ASSEMBLE Serve the drinks over ice and garnish with a slice of fresh ginger.

Lemon and Elderflower Meringue Float

A modern twist on a classic, pairing a deliciously refreshing lemonade with layers of creamy meringue, toasted to perfection!

Ingredients Serves 2

• 1/2 Large Egg White
• 40g Caster Sugar
• 1 tsp Water
• 2 Lemons, juiced and pared
• 15ml simple syrup
• 60ml bottlegreen Hand-Picked Elderflower Cordial
• 250ml Tonic water
• 2 scoops Lemon Sorbet

FOR THE LEMONADE Combine lemon juice and bottlegreen elderflower cordial in your martini glass. Fill with tonic water leaving enough room for a scoop of sorbet

FOR THE MERINGUE FLOAT Combine sugar and water over high heat until sugar has dissolved. Meanwhile, whisk egg white until a cloud-like texture. Remove sugar syrup from the heat and slowly pour into the egg whites, whisking at high speed. Continue whisking until the mixture is cool, firm and glossy.

ASSEMBLE Add one scoop lemon sorbet into the glass. Fill a piping bag with the meringue and pipe over the sorbet. Brown with a blowtorch and serve!

Raspberry Crumble Frozen Smoothie

Our mouthwatering smoothie, packed with sundrenched raspberries with a sweet crumble topping.

Ingredients Serves 2

Crumble -

• 15g Plain Flour
• 15g Rolled Oats
• 15g Demerara Sugar
• Pinch of Salt, 10ml Oil

Smoothie -

• 100g Frozen Raspberries
• 50g Raspberry Sorbet
• 45ml bottlegreen Plump Summer Raspberry
• 40g Greek Yogurt

FOR THE SMOOTHIE Combine all the ingredients in a blender or food processor and blitz until smooth.

FOR THE CRUMBLE Stir together all of the ingredients in a bowl ensuring it is all evenly coated in oil. Spread out onto a lined baking tray and bake for about 20 minutes at 180ºC until deeply golden, stirring halfway.

ASSEMBLE Fill glasses with the raspberry smoothie leaving about ½ cm space. Top with a layer of the crumble mix.

Elderflower & Earl Grey Collins

A beautiful fragrant serve which epitomises summer in a glass with the rich flavour of handpicked elderflower complimenting the elegant notes of earl grey tea. The perfect accompaniment to any British summer occasion.

Pour all ingredients except for
the soda water into an ice filled
shaker and shake before pouring
into an iced filled glass. Top with the soda
water and then place the teabag into the glass.
Stir the teabag round 5 times so you can see
the tea infusing with the cocktail.

Muddle the cucumbers and peas together until they have mushed into a thick textured juice. Hard shake all ingredients with ice until chilled then strain with a tea strainer into a martini glass. Garnish with mint sprigs.
